    Spaghetti pesto sauce with Grilled Chicken Breast

    Hey guys, just tried this out tonight for a PPWO, it tasted great! Good for a cutting cycle too! I've never posted a recipe but I thought this merited a mention here! Its long and sounds complicated but it took me 15 minutes to make!!! And the ingredients are stuff you'd usually have in the kitchen (except the basil, which you can buy on your way home or something).

    Spaghetti pesto sauce with Grilled Chicken Breast:

    2.5 oz of whole wheat spaghetti
    1 chicken breast (250g)
    1 tsp dried rosemary sprinkle
    1 tsp dried parsley flakes
    pinch of salt and pepper
    Calorie free cooking spray (Butter flavor if possible)
    Ready grated parmesan cheese

    For the pesto sauce:
    1 cup fresh basil leaves (don't compress, just lightly stuff in the measuring cup)
    1 tbsp olive oil
    1 tsp chopped garlic
    a pinch of salt, pepper and red chilli powder

    1. Mix all the pesto sauce ingredients in a sauce blender until you get a light green paste. Empty paste into a mixing bowl
    2. Boil Spaghetti until cooked al dente.
    3. While pasta is boiling, pound the chicken breast with a cleaver until thin and tenderized. Then, rub salt, pepper, rosemary and parsley into the meat on both sides.
    4. Saute the breasts in a skillet/pan with the cooking spray until golden brown
    5. Remove chicken and let sit for 5-10 minutes
    6. Meanwhile, drain the spaghetti with a strainer and put into mixing bowl with pesto sauce. Mix until consistent.
    7. Slice chicken breast into thin pieces by angling the knife sidewards,
    8. Move pasta onto a serving plate, place the chicken slices on top, sprinkle some grated parmesan and Voila! Enjoy

    The Macros

    Protein: 60g
    Carbs: 50g
    Fat: 17g (14g from olive oil, which is O m e g a 9 EFA)
    600 kcals

    -you can adjust chicken/pasta/olive oil to tweak the macros to fit your daily calorie intake (I take 3000 kcals in 5-6 meals, so this works for me)
