Australian-Style Chili
Came across this beauty in one of my fitness mags today. This one is a must for when you desperately need a break from tuna and chicken breast. One of my new favs. Makes 4 servings.
Ingredients
3 cups water
1/2 cup dry quinoa
1 lb ground lean turkey
1/2 medium onion - chopped
1/2 cup freezer corn
1/2 package of frozen mixed peppers
1 6oz can tomato paste
1/2 tsp cumin
1 tbsp chili powder
Salt/Pepper to taste
To Make
1. In a large pot, add the water and the quinoa; bring to a boil. Cover and reduce heat to medium. Cook 30 minutes
2. Brown the meat in a skillet, then add the chopped onion.
3. Add corn and assorted peppers and toss over high heat until vegetables are thawed and slightly browned.
4. When quinoa is done, stir in the tomato paste and mix well. Add turkey and veggies, mix it all up, and then add the spices. Mix thoroughly.
5. Cover; and simmer until the mixture thickens on low-medium heat.

286 calories
35g protein
33g carbs
5g fiber
3g fat

not a huge fan of tuna... i definately can use a change in variety of foods especially for protein intake. thanks!
