Happily Ever Apple Pork Chops
Ok, I normally tell people to stay away from pork as it has the highest amount of fat, with the least amount of protein as far as meats go. BUT there comes a time such as the holiday season where even pork has its place on the dinner table. This is a good one and I hope that you like it.
Happily Ever Apple Pork Chops
Succulent pork chops topped with a sweet and spicy apple-mustard sauce
6 boneless pork loin chops (about 5 oz each) trimmed of fat
1 cup apple butter
2 tbsp. Mustard
1 tsp. ground cumin
1/4 tsp. salt
1/8 tsp. black pepper
3 cups peeled and sliced Golden Delicious apples (about 3 large)
1/2 cup thinly sliced onions
2 tbsp. cider vinegar
Spray a large, non-stick skillet with a non-stick spray. Cook chops over a medium-high heat until browned on both sides, about 5 minutes.
In a small bowl, combine apple butter, mustard, cumin, salt and pepper. Spoon evenly over chops. Reduce heat to a medium-low. Cover, and cook until chops are just slightly pink in the center and juices run clear, about 10 minutes. Lift out chops, leaving sauces in the skillet, and keep it warm.
Add apples, onions, and vinegar to the skillet. Stir to coat apples and onions with sauce. Cover and cook over medium-high heat for 5 minutes, until the apples are softened and the onions are tender.
To serve, spoon apple mixture over warm pork chops.
