Mexican Meat Loaf *AMAZING*

2lbs - lean hamburger
1/4cup - onion diced
1/4 cup - picante sauce
1 cup oatmeal (precooked)
2 - egg whites
1pkg. taco seasoning
1 cup - picante sauce
1 cup - non fat cheddar cheeze

Mix the hamburger, onion, 1/4 cup picante sauce, oatmeal, egg whites, and taco seasoning. Form into a loaf, cook for 1 hour at 350 degrees. Remove from oven and top with 1 cup picante sauce and cheddar cheese. Return to oven untill the cheese is melted. Can also be made into meatballs. Topping individual meatballs with picante sauce cheese and a jalopeno.

I just made this last night, but I added a mixture of FF sour cream, FF cream cheese and a little taco seasoning, mixed it up. Then I used that as a cold topping on the hot meatloaf and topped it off with shredded lettuce, sliced olives, picante sauce and shredded FF cheese. I'm on a cutting diet and figured this was more along the lines of bulking but it was Sunday night and I cheated.
