So I was looking to add some protein to my breakfast...something light and containing good fats. Never ate Trout before, not sure why I thought it would be good with eggs. Just got done eating it...it was amazing!

Prep the Trout (if you're like me, you may need a quick refresher)

Cook Trout first...I baked it at 350 for a bit with garlic and onion powder

Take out, set aside, scramble some eggs (I used 2)

While the eggs cook, cut the Trout down the middle longways. Use a fork to flake one of the fillets and mix in with the eggs (1 fillet should be about 3 oz.).

I really find it makes a big difference with eggs if you keep stirring them while cooking. Try not to let them sit or they will be dry.

Finally, finish with a bit of cayenne red pepper

I think I'm going to have this for breakfast everyday for a little bit. Damn good! Here's some macros:

Calories: 302
Fat: 16g
Carbs: 2g
Protein: 34g (seems a little high...used calorieking.com for the trout)

Don't knock it till you try it
