Tasty Chicken/Veggie/Brown Rice Rocket Fuel
Alrighty, I fired up a storm tonight and was surprised with the positive outcome so i'd thought i'd share.
You will need:
2 large chicken breasts
1 - 1.5 cups brown rice
1 onion
1 capsicum
1 carrot
garlic powder
sweet soy sauce
Its fairly straightforward. You have to cut up the carrot and boil it for a bit and then boil the rice. Then you just brown the chicken breast, onion and capsicum in the pan together. Once the carrot is done, chuck that in the pan with everything else. Mix it up and then add the cooked rice to the pan as well. Season with some garlic powder and mix thoroughly. When you're happy, slowly pour a small amount of sweet soy over the mixture until you reach your desired taste.
You can add/remove ingredients and increase/decrease the amounts used depending on how much you want to cook at once. I've just made about 3 days' worth of lunch in one go and put it in a few separate containers. It tastes pretty damn good and is a clean source of protein and carbs.
