Peachy Pork over Brown Rice
In Todays installment of Cooking with Chef Boy-R-Dizzy we are making Peachy Pork over Brown Rice.
I usually triple or quadruple the amounts to cook for the work week.
Ingredients
• 1.5 cups instant brown rice
• 1lb. pork tenderloin cut into 1” cubes
• 2 Tbsp. Olive Oil
• 2 Tbsp. Hot Taco Seasoning
• 1 cup Salsa
• 3 Tbsp. Peach Preserves
Cook rice according to package directions. Meanwhile, place pork in a large bowl; drizzle with oil. Sprinkle with taco seasoning; toss to coat.
In a large skillet coated with cooking spray, cook pork for 8-10 minutes or until no longer pink. Stir in salsa and preserves; heat through. Serve with rice.
Nutritional facts:
1 cup pork mixture with ½ cup rice:
