    Turkey & Oat Meatloaf

    Been working this up for a few weeks...

    - Turkey & Oat Meatloaf -

    1 1/2 cups old fashioned oats
    1/2 cup egg whites
    1 medium onion, chopped
    2 pounds 93-99% lean ground turkey or beef
    1/2 cup red bell pepper, chopped
    1 carrot, peeled, chopped
    1 teaspoon salt
    1 teaspoon cayenne pepper
    1 tablespoon chili powder
    1 teaspoon dried thyme
    1 teaspoon ground cumin
    3 cloves garlic, chopped
    Freshly ground black pepper
    Dash Worcestershire sauce

    Preheat the oven to 350 degrees F.
    Mix all ingredients by hand, form loaf using breadpan.
    Bake for about 1 hour or until an instant-read thermometer registers 160 degrees F.

    Or - patty and grill on foil about 12-15 minutes, turning as you would burgers.

    Serve with A-1 &/or Red Hot (mixed?)

    Makes 8 servings / pattys
    Per Serving:
    Cal = 250
    Car = 15
    Pro = 25
    Fat = 10

    I'm still kinda playing around with the seasoning, with more of a heavy hand - I like spicy and rich. Let me know if you think it's still too bland.

    Made some the other day. The left overs made great sandwiches.

    I got some 96% lean ground beef yesterday, Gonna try it with that and no turkey. Bet it's gonna be GOOD!
    I also don't have an oven so I patty these and grill them like burgers on foil (they get a little sticky) Love the char flavor!
