    Fiesta pancakes

    So after getting sick of having eggs and oats for breakfast every day for months I came up with this as a way to change it up a bit. Still eggs and oats but a nice little change up and can be altered pretty easy to suit anyones macro needs.

    My recipe is currently this:
    1c oats blended to a flour
    2 whole large eggs
    4 eggs whites
    3tbsp of a nice chunky salsa

    Mix all together in a bowl to get your batter then make your pancakes. For me this makes a stack of 5 cakes about 4 inches in dia. I top mine with some hot sauce after cooked for some spice.

    Macros are. 521 cal, 37g pro, 61g carbs, 16g fat

    Can be altered to fit anyones diet. Have em with a few oz of lean steak or some chicken breast to up the protein in the meal.

    I like this because it can be an anytie meal - like dinner (not that any meal cant)
    Just wondering if you could simply add shredded, cooked chicken breast right into the batter.

    Don't know why you couldn't add it right I. With the batter. I've done it several times with just eggs to make an omelet. It would just make the cakes a little more lumpy. The reason I like this one so much is it looks like less food compared to 6 scrambled eggs and a bowl of oats. So for people that have a hard time getting a lot down it tricks the mind a bit.

    Ok so just the eggs and oats make a great batter to play with. I was out of salsa today so used sugar free jam. It only adds 15 cal and 10g carbs for 3 tbsp jam, and you drop the 2g of sugar that my salsa had in it.
