Fluffy pancakes
I got the initial idea from a recipe i saw on this board but i changed things up a little and i think these are pretty dam good.
1 cup of oats (powder the dry oats. I use a coffee grinder)
1/2 cup of egg whites
1/2 cup of cottage cheese (I use fat free)
2-4 packets of splenda (Depending on how sweet you want them)
Add a few drops of almond extract or vanilla extract or Cinnamon. They all taste very good.
Let the batter sit in the fridge for about 30 mins. This will allow the oats to absorb some of the liquid and make a thick batter.
Spray the pan with some extra virgin olive oil. Cook on medium temperature. Makes about 2 pancakes.

Drop the Splenda and switch to stevia. Dave Ruel has some great breakfast recipes. PM me if you want a reference.
