    Pumpkin Cheesecake

    This is a nice twist on the standard cheesecake. Really good for holidays.

    Pie Crust

    Mix 3 cups of graham cracker crums, 3tbsp sugar, 1/2 cup chopped pecans and 2/3 stick of melted butter. Press onto bottom and sides of 9" springform pan. Add cinnamon or ginger to mix if desired.

    Filling

    3 packs of Philly creamcheese (SOFTENED)
    1/2 cup canned pumpkin
    1/2 cup sugar
    1 teaspoon vanilla
    1/2 tsp cinnamon
    a touch of cloves and nutmeg
    3 eggs

    Mix creamcheese, pumpkin, sugar, vanilla, and spices until well blended. Add eggs one at a time until well blended.

    Pour onto crust

    Bake at 350 for about 45-50 mins or until center is almost set.

    Referigerate for at least 3 hrs.

    Serve with or without Cool whip

    Also can put pecans on top if desired. (after cooking)

    Thanks for the recipe - but I was hoping for something geared towards our goals here, e.g. a high protein, low carb/fat version. Splenda/Stevia instead of sugar, applesauce instead of butter, etc.

    There was a thread on best pies last night that got me wanting some junk. So I figured I'd post my favorite. Add a few scoops of proetin powder or just drink a shake with it. Would be a good post workout meal.
