Braised Venison Cube Steak with Red Wine Pan Sauce and Brown and Wild Rice
Ingredients
2/3rd pound of venison cube steak
half of a medium onion
one cup red wine
one cup of brown and wild rice
Directions
Brown steak in pan on each side. Remove from pan. Add onions and cook until clear. Add wine and deglaze pan. Add the venison back to the pan, cover with foil and put in oven at 280 degrees F for 2 hrs. Remove from oven, take foil off and place on stove top. Reduce cooking liquid to create pan sauce. Cook rice and place on plate. Place steaks on bed of rice and pour pan sauce over all. I used stainless steel pan, so I could go from stove top to oven without messing another cooking vessel. Wanted to use a mirepoix (2 part onion, 1 part carrot, 1 part celery) but didn't have carrots or celery, plus just trying to use what I had on hand...fridge raid!! Enjoy!
