Made some Chicken last night turned out pretty good. Here is what you need:
Chicken Breast - I use Costco chicken and usually make a large batch so it was 6 breast total
Panko Asian Bread Crumbs: 3oz layed out on foil
Egg Wash: Egg whites and water in large bowl
Seasoning: I used Lemon Pepper and Iodized Salt
Directions: 1.) Clean and dry chicken breast then dip in egg wash.
2.) Take out and season with salt and lemon pepper on both sides
3.) Drag onto your sheet of bread crumbs both sides
4.) In large pan add olive oil med/low heat cook chicken approx. 10 minutes or until white in the middle. Don't get oil to hot or it will splatter. And you can also put cover over the top to prevent messy cleanup.
Add chicken to bed of seasoned broccoli, kale, spinach, and romaine. Enjoy
Nutrition: I calculated about 8 grams of Carbs per chicken breast. Using a little less than 4oz of crumbs. A little more fat with the olive oil but it won't hurt ya.
