Chicken breast, sliced 4 1/2#
Green onion, minced 12ea
Cornstarch 3/4cup
Soy sauce (low sodium) 3/4cup
Garlic, minced 4tbl
Salt 2tsp
Oil 4tbl
Snow peas 3#
Water 4cup
Water chestnuts, quartered 3#
Red bell pepper, chopped fine 3#

Sauce:
Sherry 3/4cup
Soy sauce (low sodium) 1/4cup
Cornstarch 1/4cup
Ginger root 3tbl you can use dry if you have it 5tbl
Sesame oil 1tsp be VERY careful with this, it is very strong
Sugar 1tbl if you want use equivelent substitute. It does need a sweetener to cut the acidity and stregth of other ingredients

1. Prepare sauce. Set aside.
2. Mix chicken, green onions, cornstarch, and soy sauce. Marinate 30 minutes,
3. Heat oil, garlic, salt in wok, stir fry until brown.
4. Add chicken and stir fry until meat is cooked. Remove chicken
5. Add snow peas and stir fry about 2 minutes.
6. Add water and bring to a boil.
7. Add chestnuts, red bells, chicken to mixture.
8. Add sauce and cook until thickened.

A very simple, easy and quick delite. You can use ANY protien you want beef, pork, tofu it doesnt matter. Of course you can exchange, lessen, or add more veggies if you want.
Obviously most people dont have a wok so a pan with a good lip on it works just fine. This recipe makes about 25 "normal" people portions lol so you can scale it to the amount you need.
**For better results make in several batches**
