    Fajita Chicken Breasts

    Here's a simple southwestern chicken breast recipe to change up that boring & bland chicken we eat so much. You can do anything with it, by itself, taco's, burrito, salad, sando etc.This is for a 10# batch.

    Chicken Breast 10#, you can cut in strips & it will retain more marinade or keep whole.

    Marinade:
    Yellow onion diced small 10 ounce (prob 1 good size large onion)
    Veg oil 1cup**
    Lime juice 7 tbl
    Cilantro, chopped 1 bunch
    Garlic, minced 1.25oz (5 cloves)
    Chipolte pepper in adobo sauce 1oz, every store carries cans of these, usually 7oz cans very cheap
    pepper 1.25 tbl
    Kosher salt 1 tbl

    There are 2 ways you can prepare this, chop all ingredients & mix or put everything in a blender/foodproceeser and go!

    Mix marinade with chicken, let sit for 2hrs or overnight, mixing a few times. Cook at 350* until done or these are great on the BBQ.

    **This seems heavy on the oil but: 1) you can use any oil or cut back just enough to keep it "wet" 2) you will be discarding the marinade so in actuallity not much is going to "soak in" the meat itself.

    Cant get enough chicken recipes! Just gotta mix it up from time to time, cheers
