Here's a good, simple breakfast bake that can be had in the morning or as your mid morning meal, you can actually put it in the bread and have a great breakfast sandwich, good for "on the go". Again, you can add anything that you want, the recipe is very forgiving.The recipe is for 12 servings:

Mozzarella, part skim, shredded 6oz
Turkey sausage, cooked and crumbled 6oz
Mushrooms, chopped 1/2cup
*Onion, chopped 2tbl
*Green pepper, chopped 2tbl
*Potatoes, shredded 6oz
Eggs, 6ea
Skim Milk, 1cup
Salt, to taste
Pepper, to taste
Wheat bread, toasted, 24 slices
Margarine, 1/4cup

Oven 375*
Spray an ovenable pan (casserole dish) with cooking spray.
Combine, sausage, cheese, mushrooms, onion, peppers and potatoes, then pour into pan.
Whip eggs, milk, salt & pepper together and pour over other ingredients.
Bake for about 40 minutes.
Serve with 2 slices of buttered toast.

*you can buy already chopped bells and onion mix frozen, also buy hash browns frozen, this will save a bunch of time.
