    Spinach and Tuna Salad

    Summer is here and its starting to heat up! A simple and nutritious salad in a light vinaigrette. The ingredients are really inexpensive and this is another quick one if you dont have time on your hands.

    Ingredients:
    •6 cups baby spinach (buy the already prepared in salad aisle)
    •12 ea cherry tomatoes, halved (6ea roma tomatoes)
    •1 cup canned white beans, rinsed and drained
    •4 ounces sliced mushrooms
    •1 15-ounce can artichoke hearts, drained and halved
    •2 7-ounce cans/packs chunk white tuna
    •1 tbsp extra virgin olive oil
    •2 tbsp white wine vinegar
    •1 tbsp lemon juice
    •1 tbsp water
    *If you want a different dressing get a low/no fat Balsamic vineagrette and it's great!

    Preparation:
    Place spinach in a large bowl with tomatoes, white beans, mushrooms, artichoke hearts and tuna. Whisk oil, vinegar, lemon juice and water. Drizzle over salad and toss well.
    Serves 4-6.

    Per Serving: Calories 203, Total Fat 3.4g (sat 0.5g), Cholesterol 20mg, Carbohydrate 20g, Protein 23.3g
