Chicken/turkey breast with Mushroom and Wine Sauce
Super easy and fast! You can use either chicken or turkey for this. This recipe serves 12. 4oz chicken/turkey, 2oz sauce, 4oz pasta
Ingredients:
Margarine 6oz
Mushrooms, sliced, 1 1/2 quarts (about 2lbs)
Onions, diced, 1 cup
Garlic, chopped, 2 tbls
White wine 3/4 cup (if you dont have or dont want to use wine, replace with chicken broth)
Chicken or turkey cutlet/breast, 4oz ea, (3lbs) pound out to make a nice consistent thickness.
Sour cream, fat free, 12oz
Egg noodles, cooked 6 cups (can use wheat noodles)
Salt & Pepper to taste
Directions:
Saute mushrooms, onion, and garlic in margarine untill lightly browned.
Reduce heat to low; add wine and cook stirring a lot for 2 minutes.
Add protien and simmer over low heat until done.
Remove turkey; add sour cream to mushroom mix and heat.
Place protien on noodles and top with sauce.
