This is a fun, easy and the biggest is DIFFERENT way to have protien and is totally versatile (you can use ANY ground meat!)! The meatballs are a great basic recipe, you can do soooo much with them, make these meatballs and make the cacciatore sauce from the other recipe boom! something new or skewer them and put on the bbq grill, make a "Swedish" gravy, Kung Pao the list goes on! 3 balls....what? 3 MEATballs, 4oz sauce, 4oz rice.

Directions:
Meatballs:
Garlic powder 1tbls
Onion powder, 1/2tbls
Ginger, ground, 1/2tbls
Pepper 1/2tbls
Turkey, ground, 1 1/2lbs
Eggs 2ea (you can just use the whites to bring down the fat but turkey is already lean so not using yolks might make them to dry)
Bread crumbs 3/4 cup (if using meatballs for a different application you can use seasoned or season them to your liking)

Sauce:
Green bell peppers, cut in 1/2 inch strips, 2 cups
Pineapple juice, 1 1/2 cups
Water, 1 1/2 cups
Brown Sugar, 1/4 cup
Cornstarch, 1/4 cup
Rice wine vinegar, 1/4 cup (most vinegars will suffice, apple cider vinegar, if using white cut to about 2 tbls)
Soy sauce, 1/2tbls
Pineapple chunks

Rice, cooked, 6 cups (brown rice can be used)

Directions:
Combine all meatball ingredients and mix well. Shape into 1oz balls.
Coat skillet with non stick spray, on med heat, brown meatballs on all sides. Take out of pan and set aside.

Place pineapple juice,water, vinegar, and soy sauce into pan. Mix brown sugar and cornstarch together and add to liquid. Cook until sauce thickens.
Add meatballs, pineapple chunks and green peppers and coat with sauce. Simmer for about ten minutes.

Place 3 meatballs over rice.
