Austinite's Mayonnaise-Alternative. A good for anything Sauce
So I've been trying to find an alternative for Mayonnaise. Mainly due to its high calories but also for a better taste.
The ingredients:
4 tablespoons of Sour Cream
1 Boiled Egg Yolk
1/2 medium Avocado
3 tablespoons of Picante Salsa
Instructions: Mix it.
I've used both a fork to mix it, and a hand mixer. Either way works fine. This will turn out a fairly thick sauce. You can use less Salsa to make it "Dippable" or more salsa to make it runny.
Macronutrients:
Makes about half of a cup...
Calories: 262
Fats: 6
Carbs: 16
Protein: 10
For my uses, I generally use 1 to 2 tablespoons. Which comes out to about 30 to 60 calories calories, which is less than mayo, more nutritious and tastier! I think I'll try and add some lemon to it next time and experiment with it a bit.
I put this on Tilapia and it was great! Also egg salad, chicken salad and used it in a beef fajita. Tasted great on all of them. I pretty much used it all day, lol.

Just curious why do you boil the egg yolk? And soft boiled I presume?

Hi
If one made this could they put it in a jar and not keep making it? if so does one know how long before it goes off?

So would have a 2 week mark on it then? as this would be nice to have than that fatty stuff.

Thanks for the quick replies, I will go on the egg which is 3 days with me but always eaten before day 2 lol.
so a 3 day mark set on this for me so thank you for the recipe.

I'm back this was very nice and you could taste the none fat in it.
Thanks for the recipe i'll be using this than normal mayo.

Have you tried this with greeek yogurt subbed for sour cream? I know a lot of recipes sub the two and you can't tell the difference
