Pineapple Black Bean Couscous
Start off with what's important...Macros and Price!

Ingredients-
Canned Black Beans: 2 cups
Pineapple: 2 cups
Water: 1/2 cup
Couscous: 1 cup
Dry Taco Seasoning Mix: 2 Tbs
More Water: 1/3 cup
Procedure-
Rinse and drain beans. Drain Pineapple; reserve juice.
Combine 1/2 cup water and reserved pineapple juice in a saucepan over medium-low heat; bring to a boil and immediately remove from heat. Stir couscous into the liquid to coat. Set aside until the liquid is absorbed and the couscous is tender(about 5 min) and fluff with a fork. Set aside on plate. (I personally split into two servings)
Stir pineapple chunks and black beans together in a skillet over medium heat. Mix 1/3 cup of water with taco seasoning in a small bowl. Pour over black bean mixture. Cook and stir until hot. (About 5-7 min) Spoon over Couscous to serve.
