Roasted Potatoes
Roasted potatoes
(Simple roasted potatoes with green beans and onions, tossed in balsamic vinegar)
If you like potatoes, you’ll like this one. It is a great companion to roasted or barbecued meals.
11/2 pounds of small red potatoes, unpeeled, quartered
(Hint** If you are using small red potatoes, cut them in half instead of quartering them)
2 medium onions, peeled and quartered
1 tbsp olive oil
8 oz fresh green beans stems removed
2 tbsp balsamic vinegar (See note at bottom marked ***)
1 tbsp dried thyme
½ tsp salt
¼ tsp black pepper
Spray a medium roasting pan with a non-stick cooking spray. Add potatoes, onions, and olive oil. Mix well. Cover with foil and roast at 400 degrees. For 30 minutes.
Add beans, vinegar, thyme, salt, and pepper to the potatoes in a pan. Stir until vegetables are coated with vinegar and seasonings. Roast, uncovered for 25 minutes until the potatoes are tender and crisp around the edges.

Note *** - Italian balsamic vinegar is made from white Trebbiano grape juice. It gets its dark color and pungent sweetness from aging in wooden barrels over a period of several years. It’s more expensive than other vinegars, but a little balsamic vinegar goes a long way.

becareful not to cook at too high of a temp with olive oil. if you cook it past its smoke point it converts to trans fats
