Mountain High Broccoli
Broccoli Mountain High
(Broccoli coleslaw with turkey bacon and a creamy dressing)
* Stands for see hint at bottom of recipe
1/3 cup low-fat mayonnaise *
2 tbsp. white vinegar
1 tbsp. Sugar
½ tsp. celery seed
6 cups broccoli slaw mix **
1 large red apple unpeeled, cored, and diced.
1 cup of grated carrots
4 slices of turkey bacon cooked and chopped into small pieces
In a small bowl combine mayonnaise, vinegar, sugar, and celery seed. Refrigerate until ready to use.
In a large bowl, toss together the broccoli slaw mix, apples, carrots, and cooked bacon. Add dressing and mix well. Refrigerate for 1 hour before serving.
Make about 6 servings

0.6 grams of Sat Fat
4.3 grams of Protein
11.4 grams of carbs.
3.2 grams of fiber
8.3 mg cholesterol
263.6 mg sodium

Hint ** Ultra light miracle whip works well in this recipe and in others that call for low-fat mayonnaise type dressings. Broccoli slaw mix is made from grated broccoli stems and often includes grated carrots, too. Look for it where you find pre-packaged salads at your local grocery store. If you can’t find it, you can always substitute it with regular Cole slaw mix.
