Thai Spring Rolls
Thai Spring Rolls
(Vegetable-filled spring rolls with a spicy, Thai dipping sauce)
Dipping Sauce (* = See hints below)
¾ cup of water
2 tsp. cornstarch
1/3 cup of seasoned rice vinegar
¼ cup of brown sugar
1-1/2 tbsp. Reduced sodium sauce
1 tbsp. grated gingerroot
1 clove of garlic, minced
¼ tsp. crushed red pepper flakes
2 oz rice vermicelli noodles (uncooked) *
1 cup each of grated carrots, and chopped bean sprouts
½ cup peeled, seeded, and finely chopped cucumber
½ cup of chopped green onions and chopped fresh mint leaves.
2 tsp. sesame oil
14 6-inch rice papers **
Whisk together all of the sauce ingredients in a small saucepan. Heat over medium – high heat until mixture comes to a boil and thickens slightly. Remove from heat and let cool to room temperature.
Boil vermicelli in a large pot of water for 4 minutes, until tender. Drain, rinse with cold water and drain again. Blot dry using a paper towel.
Pour sauce over vermicelli and serve immediately.
Hint ** Rice papers made from rice flour and water, look like traqnslucent tortillas. They must be soften by soaking them in water before useing. Package dry and in plastic wrap, look for rice papaers at well stocked grocery stores or in an Asian food market. Be careful not to confuse rice papers with spring roll wrappers, which are made from wheat flour and are meant to be deep fried.
Rice vermicelli ( or rice -flour noodles) are extremely thin, almost thread like noodles. You'll find them in the Oriental food asile of most super markets.

These are great for football season. Or anytime you are just looking for a great snack that is low in fat.

Did you also forget to type some stuff on this recipe? I'm finding it a bit confusing!

Actually I guess do I need to proof read the post more often.
After reading the post again I did forget to type in the hints about rice papers and Rice vermicelli, and yeah your quote above was correct. Guess I kinda got in to big a hurry on this one.
