I dunno how many of you have heard of spaghetti squash...its flesh comes out like strings of spaghetti...it's the coolest vegetable I've ever seen. Anyway, I just made this casserole-type thing with it and it was awesome.
1 spaghetti squash
.5 cup spinach (after cooking)
minced garlic
salt, pepper and basil
2 links chicken sausage (I used sundried tomato & basil flavored)
1/8 cup parmesan cheese
1/4 cup fat free mozzarella
1 8 oz. can tomato sauce
cut squash lengthwise, remove seeds. place cut-side down on a baking pan and bake for 45mins at 350 degrees or until tender. Use a fork to pull out the spaghetti-like flesh.
sautee spinach in a small amount of water & minced garlic. Drain and pat dry with a paper towel.
cut up sausage links into bite sized pieces and brown in a nonstick frying pan w/a little oil spray.
pour a thin layer of tomato sauce in the bottom of a casserole dish
season with salt, pepper and basil
layer 2 cups of spaghetti squash, spinach, sausage, parmesan cheese, the rest of the tomato sauce, and the fat free mozz on top.
Bake in a 350 degree oven for about 40 mins.
