Light and Crispy Catfish
Serves 4
Ingredients
1 pound catfish
2 Tbsp. grated Parmesan cheese
3 Tbsp. corn meal or dried bread crumbs
½ tsp. black pepper
¼ tsp. onion powder
½ tsp. paprika
1 Tbsp. margarine
Method
Preheat oven to 400 degrees. Rinse catfish under cold water. Pat dry.
Combine Parmesan cheese, corn meal and seasonings in a bag. Place fillets in bag and shake to coat with cheese mixture.
Place catfish in a non-stick baking dish. Melt margarine and drizzle over fish. Bake about 10 minutes per inch thickness of fish, or until fish is just opaque throughout.
Substitutions
Flounder, ocean perch, lake perch, sole, haddock, walleye pike.

1 fillet = 186 calories, 8 gm fat, 3 gm carbohydrate, 22 gm protein, 218 mg sodium, 69 mg cholesterol

Man I swear you got to be from the south!!!
You sure you ain't got just a little bit of southerner in you girl???? I LOVE catfish. In fact I would rather have freshwater fish anyday over salt water speicies. I know I am not going to win any points with Pete from that statement!!!
I just got through baking up 4 catfish fish fillets just a couple of days ago to be honest. BUT you can bet I'm going to try this one as soon as I can get to the store.
