zig-zagging calories for weigjt gain without adding fat?

I currently increase my calories over my requirements by around 500 for 4 days a week then on my rest day I eat 500 less then my requirements. I have read this is the best way to increase weight while adding minimal fat. Is a 3-5 day increase (up zag), and a 1-2 day decrease (down zag), a good way to diet while cycling as well, or do you just up your calories throughout the cycle?

I don't know for sure, but i've also read that zig zagging is good for this and keeps the body from adjusting.
