I always take saturday and sunday off. Just remeber the growing happens when you are resting not when you are working out

I take two days off every week. I just make sure I hit it hard in the gym for an hour the days I am in there.

I always take two days off following my squat work out... here is a quick look at my current split:
    Mon- squat
    Tues- off
    Wed- off
    Thur- bench
    Fri- deadlift/back
    Sat- close grip bench/arms
    Sun-off

Nothing wrong with 48 hours of rest as long as the rest of your protocol is sterling in nature.
