More than likely there should be no difference, of course everyone response different so experiment to see for sure.
I doubt there would be very much difference as the total volume of weight would still be very similar as well as % of max lifted weight.
Personally I like going 3x5, but after the 3rd set I like to follow up with an isolation movement for 20 reps.
I got really great gains doing 3 full body workouts 3 times a week. Like take chest for example..
Monday - DB bench 3x5 followed by incline cable flyes 1x20
Wednesday - DB or BB Incline Bench 3x5 followed by decline db flyes 1x20
Friday - Decline DB Bench 3x5 followed by cable crossovers 1x20
Basically i just pick 1 different compound movement followed by a different movement for each body part 3 times per week.
For legs though, I stick with leg press 3x5 followed by 1 set of breathing squats x 20 all three days of the week.
When you think about it, take legs for example, you will end up doing 45 reps of heavy ass leg press in 1 week
I only did this type of training for 6 weeks, but it worked for size.
There will be no difference.
