My (R) tri-cep is more cute and defined than my (L), my ? was what is the best route to get the (L) up-to-speed with the (R). Should I just stop training the (R) and wait for the (L) to catch up?

I would go about single arm press downs and single arm dumbbell extensions. See if one is THAT much stronger than the other. I wouldn't quit working out the other. Still do exercises to keep it full but maybe do the reps a bit higher while you focus in on bringing up the lagging tricep with heavier weight and lower reps.
