I see a lot of differing information varying between 3 sets of 8 and 4 sets of 10... which one is actually better?... My goals are to bulk 15-20lbs up and trim the fat 20% 12-15%... currently 190, 6'0.

There are a small set of loose guidelines so-to-speak that people follow depending on whether bulking or cutting. High weight with low reps 5-6 will get you lots of strength. High weight with reps 8-10 seems to be optimal for most people when bulking. Lower weight with higher reps 12-15 is more for burnouts and endurance.
I would suggest 3 working sets of 8 to 10. Go as heavy as you can without compromising perfect form. Remember that form is very important. By working sets I mean don't count your warm ups as a set.

at 6 foot 190 with 20% bodyfat you need to be concerned with learning how to lift properly, how to do the basic exercises properly, and getting better at them. Ditch the typical bodybuildling split and get stronger, and eat properly and enough of the right things. You don't have to train like a powerlifting, but strength and size correlate pretty damn well when you are a beginner and make things easy to track. Make progressive overload your friend.

It really doesn't matter, if i were you i would keep it simple and track your workouts. 5x5 is nice and simple, it is what i am using on my bench right now as i am coming back from some time off. It is good for squats, but i would drop the volume for deads. Put up your lifting program and i can take a look if you want.
