Mashed Cauliflower
This mashed potato substitute is becoming popular among the atkins/south beach followers...I finally got around to trying it (minus the heavy cream used in the atkins version) and it's **** good. Here's the recipe:
1 bunch of cauliflower, steamed (makes about 3 cups)
3 tbs. light sour cream
2 tbs. fat free promise spread
salt and pepper
chopped chives
mash steamed cauliflower, add all other ingredients.

Yep, I just had it tonite. I also don't even add the cream...it's not needed and still tastes good.
