I love chicken, how about you?
Title says it all Unfortunately it can get bland at times - what are some herb/spice mixes and or sauce mixes we can use to make them tastier? Any chefs/cooks in here have restaurant experience and can share whats been used to give skinless chicken breasts a healthy crust and/or flavor in general? Thinking:
Herb/Spice mix - Roll it/pack it onto the chicken breast - lightly fry in olive oil
Herb/Spice mix - Simply steam it, cut up and enjoy
Sauces - Teriyaki etc, usually go well with rice anyway
Problem is - what are some solid herb/spice mixes we can use? Thanks!

Ha. There is a black guy I work with who is amazed by how much chicken I eat. Kind of an ongoing joke but yea, I eat more chicken than the stereotypical black guy
Lately Ive been making beer butt chicken, splitting it into 5 portions and using a different sauce everyday. Low Sodium gravy, buffalo sauce, teriyaki, etc. This week Im going to try stuffing the chicken with lemons and onions and add some lemon herb spread to season the outside. Heard thats pretty good.Last edited by fig; 09-19-2009 at 12:03 PM.

Go to your local meat market they usualy sell a ton of different poutly seasonings. I but 20lbs of chicken breast and cut them into halves to thirds and season them up and throw em on the grill. I have a pot full of chicken breast for salad, rice, whatever. It your craving a snack there good cold too. Cut them thin and don't overcook, that's key.

we love chicken yes we do, we love chicken how about you??
I boil up 8 breast at a time, then eat them that way with different flavors at each meal.. the trick to boiling it is to bring to boil then turn off the heat, leave in water till it's cooled.. the chicken will always be moist..The answer to your every question

I lightly saute in EVOO until crisp on the corners and fully cooked through ; a good way to do this is by lightly searing each side so it lets more heat in.
I cook about 4 at a time. I put crushed up garlic and a tiny bit of EVOO in a Ziploc with the chicken a day before to let it marinate. When I am done, I add a bit of home made salsa or a chinese hot sauce for flavour, nothing else.

Well one thing that has made my chicken eating much more enjoyable. It works well and make things taste so much better. It makes spices and marinades sink in like a charm. Try it with cheap steak and it even helps with that too. It has truly made eating cheap a lot easier!

As for one of my fav recipes: Sprinkle garlic, onion powder, pepper, and a pinch of salt. Then roll in finely chopped almonds. You can bake it or pan fry it with a little PAM and medium heat.
