Veggies that are recommended for cutting

I love Spinach, and load it up with my chicken/tuna and dressing= (nonfat)

    Is this ok?

Or do we need broccoli , cauliflower, carrots etc?
    Thanks

I eat a ton of Broccoli, and I do a saute of olive oil, red/yellow/peppers, and onions. I put that on my chicken or beef to liven it up a little.

Why no Carrots? I eat carrots every night with dinner.

Am I hurting myself or just not helping myself?
