Well, you'd get some of the nutrients. But that's not the only reason we eat veggies in our diets. Another reason is the fiber helps promote better digestion. Yet another is the fact that they're not an energy dense food, so you can eat them to feel more full without consuming more calories. I'd say you can substitute occasionally, but don't eliminate them from your diet. You'd be missing out on too many positives.

hmm. so do you guys cook your veggies or eat em raw? should I stay w/ the green variety or does it matter?
I steam them but a bit less than most cause I like that raw taste. I use frozen veggies how bout you guys?
As far as what types, I eat a lot of brocclli but I dont know why, also like any type of mixed,
The brighter the color the better (higher amounts of antioxidents)
