    Shrimp Stir Fry

    6oz Shrimp, peeled
    1/4 tbsp. low-sodium soy sauce
    1/2 tsp. rice vinegar
    1/4 cup fat-free chicken or vegetable broth
    1/4 tsp. minced garlic
    1/4 tsp. minced ginger
    1/2 cup red onion, cut in wedges
    1/2 cup broccoli florets
    1-1/4 cups trimmed snow peas
    1-1/2 cups halved mushrooms
    1/4 cup diced yellow bell pepper
    1/2 cup canned chestnuts, drained

    1. Rinse shrimp and drain well.
    2. Heat Soy sauce, rice vinegar, and 2 tbsp of chicken broth in a saute pan over medium heat.
    add garlic and ginger and saute until tender
    3. add all veggies to pan and continue to saute, stirring and adding more broth as necessary.
    4. add shrimp when veggies are halfway cooked, and saute until veggies are tender and shrimp are opaque

    Its sooo good!!

    What size shrimp do you use, and does it really matter or is it just personal preference?

    personal preference! I used jumpo shrimp and cut them in half actually! but baby shrimps would be awesome!

    making this in about 20 min...green beans instead of snow peas and no water chestnut - i hate the texture of water chestnuts! *L*

    Gonna run to the store and grab some things for this. I feel like you could do a lot with it ingredients wise
