Your body is designed to run on CHO as a major source of fuel, CHO is essential to regulate a healthy nervous system which your libido is a part of.
^^ makes some sense, however i've never personally heard of any direct correlation between diet and ED. You don't hear about people on the Paleo diet having this issue.
I am not the one to speak for Paleo diet but I am pretty sure OP will experience a sharp increase in libido on a refeed day soon after ingesting a large carb meal.
