dude it's true that most of the processed / ground meats out there are basically all the worthless parts that no one else would want to eat. The exception to this is some Kosher meats from select butchers.

my father works for USDA(poultry inspection), anything ground is just the left overs unless stated otherwise, something like a chicken nugget is composed of bits of scrap that are ground up and pressed together

I have a turkey farm and deli by my house where they have 98% ground turkey breast. Find yourself a specialty place like that to be sure about your product.
