2-3 hours is the standard, regardless of meal composition.

Ok, I am going to kind of hi-jack here, but my question is along the same lines. Would it be better to wait longer after a pro/carb to eat a pro/fat meal due to insulin being elevated? and if you do eat a pro/fat meal before insulin levels have died down would that cause fat storage?

2-3 hours insulin should be fine.

This should not cuase fat storage. Protein and Fat illicit and isulin repsonse as well, I'll add.
