When you eat carbs, your insulin spikes (all relative to the GI of the carb), but either way, your insulin will spike. If you consume fats in the same meal, you are at a higher risk (because your insulin is spiked) to have that fat stored as fat instead of used for energy.
Hows this sound? Definetly could be wrong and there is more in depth stuff that I am not aware of, but this is what I understand to be the basis of it.
