I snagged this off another web site, obviously you may want to skip the salt.
INGREDIENTS:
* 1 large sweet potatoes
* 1 tbsp of extra virgin olive oil
* 1/4 tsp salt
PREPARATION:
Preheat the oven to 450 degrees.
Cut the sweet potatoes into 1/2 inch strips or wedges and toss in the oil and salt. Arrange in a single
layer on a nonstick baking sheet. Place in oven for 30 minutes, turning once.
