I suspect it has a high fat content? If I'm serious, I won't eat anything without knowing what it is I'm eating
TR is right. Deer by it's self is very lean bit in deer sticks they add typivally tallow (cow or pig fat) to add flavor and help it all stick together. Percentages of fat vary from locker to locker but I would venture to say it's at least 50/50
