Kobe is top of the line, each cow ranging from $80k-$120k per cow. This is the most tender meat you will ever have. Melting in your mouth quality.

To Java, prime will definitely have higher cholesterol. I would consider it bad fats. But the thing wit prime is like dan said only 2.9% of beef is prime. There are many resturants across the country that claim they sell PRIME, when actually they are probably serving choice brands. Prime is very expensive even when buying in bulk for resturants. Mainly NY, Cali, and Florida have the largest sales of actual prime.

Each breed will have their own flavor, but for most people u will not be able to tell the difference. Even at prime. There are very few people that could eat a prime NY strip and a choice or angus and tell the difference. In my personal belief, Angus is a selling point. Will be priced higher for no real benefits.

I would always eat a select or standard meat, for all purposes of bodybuilding diet. IT will be tough and very undesireable, but always way to marinate and different cooking styles to help with this. Flank is by far my go to steak. It can be very tender if done right, but done wrong is almost like eating chewing gum.
