What this got me going on, except for the fact that I only have a simplistic and basic understanding of the subject, is how nutrients are taken up by the body. I have thought about it more due to your posts about moving from one type of carbs to another and what effect that have had on your body. This lead me to the following review article (I am still digesting it, no pun intended) and was hoping that might help you in why the different carbs are acting the they they are. I do not think it have an answer but clues to one.
