After much research on cycles and what not, I've decided to take the advice of many on this forum and start with Test E only cycle, to see how I react to it.
My diet will be broken down into the following Macros
Protein 180g
Carbs 200g
Fats 90g
Calories total around 2250
Purpose of this cycle:
My main objective is to really get this first cycle out of the way. I'm looking towards my 3rd and 4th cycle where I can stack a few things. My end goal is to have some extra size added (nothing crazy) and be extremely defined. Not trying to compare myself, but looking to achieve physiques similar to Sergi Constance, Lazar Angelov and jeff seid. Ultimately, and hopefully with hard work, I can gain sponorship etc. I don't have any expectations that this will be 'easy way out', nor that it'll happen over night or within 2 years. But I've been lifting long enough to understand my nutrition, and training. I do have a decent amount of definition and also feel like I'm reaching the ceiling of my max lifts.
I live in Canada, getting blood work etc, is a bit more complicated as my doctor has to approve the reasons behind it etc. Private is costly, but given the risks I'll be taking, I will get it done pre cycle for sure (what should I keep an eye on?).
So for the Cycle
1-12 Week of Test E 500mg / Week
1-12 Week Arimidex 0.25mg every other day (From day 2 up until PCT starts)
PCT
4 weeks of Clomid 50mg/day (1st week at 75mg)
4 Weeks of Nolvadex 20mg/day (1st week at 40mg)

Questions:
1) I'll be using Mission Labs for the test and Arimidex, any thoughts on their quality? Teragon Labs for Clomid
2) Can I pin just once a week at 500mg using test e or it's best to split it in half 2x a week? (Apologies in advance if this has been covered)
3) I'm in a slightly caloric deficit, about 200-300 calories, is there a lot of negative impact on my cycle with this?
4) Reading from the notes, I need to wait about 18 weeks after my cycle and pct is done. During this time, given that training and diet in check, do I lose a lot of my strength and muscle gained? What's my best bet to keep what I gained? (Minus the water and fat, even if its just 5 pounds of muscle)
5) To get into the 2nd cycle, and given I had no issues with the first, what other added substance would help me get closer to the physiques i mentioned above?
I'd like to again add that I'm not chasing the body building physique, nor just a beach boy body. I'd like to be in between, and have strengths of a Greek god. I like lifting heavy, and absolutely love breaking PRs.
