    Overtraining?

I do each muscle once a week and my chest workout takes a little over an hour not including warm up. Would this be over training?

It's actually 10 sets cause those are drop sets. Also i get that workout done in around an hour. I decided to not do drop sets for a while though because they drain me fast. I now do straight sets.

    Chest: 12sets
    Back: 12set
    Shoulders: 10sets
    Arms: 8sets each
    Legs: 14sets

I only do about 8 balls to the wall sets and they are for my main 2 exercises. The other 2 exercises are supplimentary lifts. A friend told me as long as you do each muscle once a week and your workouts are around an hour you won't overtrain.

An hour seems excessive. Decrease yout time and increase your intensity. You should be able to blast your chest in 20 minutes or less. You are probably taking to long in between sets. And your 4 sets of bench look more like 12 sets. Consider trying this instead
    Flat Bench: Drop Sets.
Set 1: 275 as many as can
Set 2: 255 as many as can
Set 3: 235 as many as can
Set 4: 205 as many as can

Only every 4 weeks or so.

So you give arms 16 sets total and legs 14???

    Somthing dont add up

Going over 1 hr on a bodypart is OTT

No lie, i could train chest in 15mins if i wanted to once i had warmed up

I like focusing on 2 exercises per bodypart and warming up with 3 sets and then one full out dc style set with drops, statics, negatives u name it. Then on to the next exercise and the same again

In gym, acheve goal (progression from last week), out gym, eat to grow

    Simple
