Not sure if I follow, how does mashing a sweet potato increase the surface area?

Its like what burns faster if you throw something it into a fire. A block of wood or a hand full of saw dust. The smaller the particles are the more surface area is exposed to be broken down by digestive enzymes. Increasing surface area increase absorption of the food.
