If the relationship is a strong as you say and she is marriage material she should understand. She may not like it or be jealous but she should still understand. Ibiza is a top spot in the world for class dj's n events. NYC is great but does not compare IMO.

Explain to her that you are fully committed and want to settle down but this is something you must experience. If she really loves you she should let you go IMO. To not let you experience the ultimate house scene knowing how important it is to you because of her own selfishness/insecurities would be awfully f'n selfish/immature on her part.
