If I have the time I will cook and eat them. Most the time I do exactly what you do and mix them with liquid egg whites and protein powder and eat them raw. If there is any difference it is probably microscopical, I wouldn't think about it to much.
As bobjack mentioned above as well you want to make sure you're buying the liquid egg whites that come in the carton and are already pasteurized. If you are eating egg whites straight from the cracked egg raw you can risk getting salmonella. Cooking the eggs at a certain tempature kills the bacteria.
