Alcohol, being a sedative, will slow down all metabolic processes.

As to test inhibition...not sure but ethanol (alcohol) can induce gyno due to its capacity to mimic estrogen or bind with estrogen receptors.

Also the liver processes circulating and excess estrogen so when excess ethanol is present and takes priority for being processed by the liver, the estrogens remain and increase plasma E.
